Which location in India would provide the lowest latency when it comes to retrieving quotes and placing orders. I'd like to reduce slippages as much as possible. What about hosting my code on a Bangalore based provider?

The KiteConnect API server is located in Mumbai,this is where you will get the lowest latency.

ws.kite.trade points to an Amazon Mumbai IP address. So I guess AWS would be the best choice.

Yes, KiteConnect server is hosted on AWS Mumbai.
